Coconut Buns PYD Chefs

( A Guyana favourite)

3 cups flour
1 cup brown sugar
2 cups grated coconut
8 ounces butter
3 eggs
11/2 tsps baking powder
¼ cup whole milk
½ cup raisins
1 tsp almond extract

Preparation
Preheat oven to 400°F
Mix the butter and sugar together
Stir flour and baking powder into the butter and sugar.
Mix together until it resembles coarse bread crumbs
Add the eggs one at a time
Add the almond extract,
Add grated coconut and raisins
Add the milk and mix to a stiff consistency,
On a greased baking sheet,
Divide the mixture in small 2 inch mounds
Sprinkle with a few drops of sugar on top
Bake for 10-15 minutes or until golden brown

Enjoy with a glass of cold milk or a fresh  cup of coffee or tea
