Apple pie is always a much-loved and a special dessert for Thanksgiving dinners.
For the crust :
- 2 cups flour
- 3/4 tsp. salt
- 1 cup shortening
- 1 egg
- 2 tbsp. cold water
- 1 tbsp. white vinegar
For the filling :
- 5 firm cooking apples
- 3/4 cup fine sugar
- 2 tbsp. flour
- 1 tsp. cinnamon
In a small bowl, combine your flour and salt.
Cut in shortening.
Beat in a separate the egg, water and vinegar,
Add to flour mixture to moisten the entire mixture.
Divide the dough in two
Form a ball out of each half.
Flatten into a four inch wide circle.
Wrap and chill the dough for 15 minutes.
Prepare a rolling pin and work surface.
Roll out the dough into two crusts
Press one of the crusts into the pie plate,
Let it hang over the edges a bit.
Preheat oven to 400 F.
Peel, core and slice up apples.
Combine apple slices with sugar, flour and cinnamon
Put the mixture onto the crust.
Place the second crust on top.
Cut slits in the top
Bake for about 35 minutes.
Cool and enjoy
Serve with a dollop of whipped cream or a scoop of ice cream
Or try this variation
Before adding the apples to the pie shell.
Simmer the apples on the stove with a dash of brandy.
Use a crumb topping instead... Drizzle with a caramel sauce.
