Pumpkin Chiffon Pie PYD Chefs

Ingredients you'll need :

For Pie Crust :

  • 1 1/4 cups crushed graham crackers
  • 1 tsp. ground cinnamon
  • 3 tbsp. white sugar
  • 6 tbsp. melted butter

Pie Filling:

  • 1/4 cup cold water
  • 1 tbsp. gelatin
  • 1 1/4 cups pumpkin puree
  • 3 egg yolks
  • 1/2 cup white sugar
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground cinnamon
  • 1/2 cup white sugar
  • 1 tsp. pure vanilla extract
  • 3 egg whites

Whipping cream (optional)

Instructions:

Crust :

  • Combine all crust ingredients in a small bowl
  • Press the mixture into a prepared pie plate.
  • Chill until crust is firm, about 1/2 hour

Pie filling :

  • In a bowl, combine water and gelatin, Let it soften.
  • In a saucepan combine next seven ingredients
  • Mix together until smooth
  • Place over medium heat and bring it to a simmer
  • Allow it to thicken
  • Add gelatin mixture, allow it to dissolve
  • Remove from heat
  • Beat egg whites until peaks form
  • Slowly beat in sugar and extract. Fold egg mixture into pumpkin mixture
  • Fill the crust
  • Chill several hours and serve.
