Ingredients you'll need :
For Pie Crust :
- 1 1/4 cups crushed graham crackers
- 1 tsp. ground cinnamon
- 3 tbsp. white sugar
- 6 tbsp. melted butter
Pie Filling:
- 1/4 cup cold water
- 1 tbsp. gelatin
- 1 1/4 cups pumpkin puree
- 3 egg yolks
- 1/2 cup white sugar
- 1/2 cup milk
- 1/2 tsp. salt
- 1/4 tsp. ground ginger
- 1/4 tsp. ground cinnamon
- 1/2 cup white sugar
- 1 tsp. pure vanilla extract
- 3 egg whites
Whipping cream (optional)
Instructions:
Crust :
- Combine all crust ingredients in a small bowl
- Press the mixture into a prepared pie plate.
- Chill until crust is firm, about 1/2 hour
Pie filling :
- In a bowl, combine water and gelatin, Let it soften.
- In a saucepan combine next seven ingredients
- Mix together until smooth
- Place over medium heat and bring it to a simmer
- Allow it to thicken
- Add gelatin mixture, allow it to dissolve
- Remove from heat
- Beat egg whites until peaks form
- Slowly beat in sugar and extract. Fold egg mixture into pumpkin mixture
- Fill the crust
- Chill several hours and serve.
