Quick Cook Spicy Shrimp Medley

1 pound frozen, large shrimp, peeled and cleaned
2 tbsp olive oil,
1 medium onion, coarsely chopped
3 cloves garlic, minced
Small piece chopped fresh green ginger
Dash of lemon juice
1 cup frozen stir fry vegetables
1 cup drained pineapple chunks
½ cup sliced fresh red and green pepper
Pinch crushed red pepper flakes
Dash soya sauce
Ground black pepper
Pinch sugar
Salt
Chopped parsley or cilantro

Heat a large skillet or wok
Add the onion, garlic,ginger and red pepper flakes
Stirring constantly
Add in  frozen vegetables and pineapple
Add shrimp, stir-fry until opaque
Stir in dash of lemon juice and dash of soya sauce
Add in sliced red and green peppers
Salt, sugar and black pepper
Sprinkle with chopped parsley or cilantro

Serve over a bed of hot basmati rice
