A loaf of challah bread
Lovely Challah Bread PYD Chefs

Now and all seasons is a great time to make this bread

Ingredients:

4 cups all-purpose flour
2 whole large eggs and 3 egg yolks
1/3 cup honey
2 tablespoons sugar
1 tablespoon salt
I pkg of yeast
1 cup warm water,
1/4 cup olive oil
1 tablespoon poppy or sesame seeds

Directions:

Set aside cup of flour for kneading and one whole egg for basting
In a large bowl mix the flour, sugar, and yeast together
Form a well in the center of this mixture
In a small bowl mix together the water, 1 whole egg, 3yolks, olive oil, honey and salt
Pour mixture into the center of the large bowl.
Combine the wet ingredients into the dry ingredient to make soft, moist dough.
Turn the dough out on a lightly floured surface and knead by hand
Knead 7-9 minutes using up the 3/4 cup flour as needed
Mold dough into a ball and place in a greased bowl
Cover with a warm clean kitchen towel.
Let dough rise until double in size, do not rush the process


Turn dough out onto a lightly floured surface
Knead lightly to release some air
Divide the dough in half; roll each portion of dough into a log shape
You can decide how you want to complete each loaf
You can cut the log shape in three and braid one loaf
Or you can wrap the log shape in a spiral circle to make a round loaf,
Moisten the end with water;
Press the end into the side of the round to seal the coil.
Place each loaf on a baking sheet lined with parchment paper.
You can lightly grease your sheets if no parchment paper
Cover loaves with a warm kitchen towel and set aside
Let loaves double in size, do not rush the process

Preheat to 450 degrees.
Whisk remaining egg with some water and baste the loaves
Sprinkle with poppy or sesame seeds
Reduce heated oven to 400 degrees
Place loaves in center of oven racks
Bake until golden brown, about 30 to 35 minutes.
