Caribe Spinach And Citrus Salad PYD Chefs

Enjoy this delightful Salad year round

6 c. fresh Baby spinach
3 c. torn Romaine lettuce
2 c. torn Red leaf lettuce
5 slices bacon, cooked and crumbled
1 sm. red onion, sliced in rings
2 c. freshly diced pineapple
1 c. fresh orange or tangerine pieces

or as a substitute to the fresh fruit use

1 (20 oz.) can pineapple chunks drained
1 (11 oz.) can mandarin oranges, drained
1/2 c. sliced toasted almonds or chopped pecans

Prepare cooked salad dressing

2 tbsp. sugar
1/3 c. cider vinegar
1/4 tsp. salt
1 tsp. celery seed
1/2 tsp. Dijon or dry mustard
1 tsp. minced onion
1 egg, slightly beaten
1/3 c. olive oil
Blend well, bring to boil
Add salt and pepper to taste
Set aside.

In a large salad bowl place all ingredients, hold the nuts
Toss with the hot cooked salad dressing.
Sprinkle nuts on top
Serve immediately.
