Holiday Cornish Game Hens
3 2lb each Cornish game hens
1/4 cup each: finely chopped celery, onions and almonds
1pkg stove top stuffing
1/4 tsp. sage
3 tangerines or oranges
Slice 1 tangerine or 1 orange
Place slices under breast skin of hens.
Mix stove top stuffing,the sage and half of the celery,onions and almonds together
Stuff hens and Glaze
Place on rack in baking pan and roast
Bake at 350F (180C) for 1-1/4 hours until cooked.
Let stand 15 minutes before serving.
To serve; cut each hen in half.
Make a light sauce
To the pan drippings add of white or red wine
2 tbsp of Worcestershire sauce
Black pepper and salt to taste
This is a fantastic dish served it with either
Two cups of cooked rice tossed with two chopped tangerines or oranges, and the remaining finely chopped celery, onions and almond nuts. Along with cup chopped carrots and a dash of sage.
Add a great green side salad
Baked potatoes, plus steamed broccoli with fresh roasted red peppers tossed with the remaining finely chopped celery, onions and almond nuts.
Add a side of glazed carrots
Do not forget a homemade cranberry sauce goes well with these hens
Tip: you may double the recipe if you have to feed a group of twelve
