Ingredients
2 tbsp. olive oil
1 c. onion, chopped
4 cloves minced garlic
4 chicken breast quarters
or
5 chicken leg quarters
1 tbsp lime fresh juice
1 (16 oz.) can whole tomatoes
1 can chicken broth
1 3/4 c. long grain rice
3/4 c. ham, diced
3/4 c. water
1 tsp. basil
1 tbsp. Tabasco or Matouks peppersauce
Salt
1/2 tsp black pepper
6-8 fresh mushrooms
1/4 cup whole black olives
Preparation
Cut chicken breast quarters in three
or
Seperate leg from thighs if using leg quarters
Rinse chicken,
Drizzle with lime juice
Sprinkle with salt and black pepper
Brown chicken in oil. Set aside
Saute chopped onion and minced garlic
Add chicken to sauteed onions
In bowl combine tomatoes, chicken broth, water and basil
Add Tabasco or Matouks pepper sauce.
Add the mixture to the chicken
Bring to a boil, then simmer covered 30 minutes.
Cut mushrooms in half
Add ham, mushrooms and olives simmer covered for 10 minutes
