Yommy Caribe Crab Casserole PYD Chefs

This is a wonderful Casserole for feasting at any season

8 oz. crab meat
8 eggs
1 tbsp. lime juice
1 tsp. curry powder
1 1/4 c. whole or low fat milk
1 tsp. minced garlic
1 tsp. chopped fresh thyme
1/4 tsp. ground red pepper
1 1/2 c. cooked long grain rice
1 c. chopped celery
1/2 c. shredded coconut

Cook rice al dente

In large bowl beat together
Eggs, milk, lime juice, minced garlic , curry powder ,
chopped thyme and red pepper,
Blend well.
Stir in cooked rice, celery,crab meat and coconut.
Pour in greased 1 1/2 quart casserole
Bake at 350 degrees in oven for 1hr,
Or until knife inserted in center comes out clean

Absolutely delicious!
Serve with a great side salad
