Summertime is here; get that grilling machine out, pump up the grill and cook some fresh fish today.
8 fish filets or steaks of red snapper, or any other white fish
2 lemons, squeezed
2 garlic cloves, minced
1 cup butter or margarine, melted
1 Tablespoon hot pepper sauce
Fresh thyme chopped
Fresh parsley, chopped
Salt
Black white ground pepper
Lemon wedges
PREPARE:
Rinse off fish
Salt and pepper fish and place in foil-lined pan.
Mix together garlic , thyme, lemon juice. peppersauce
Pour over fish. Cover
Let fish marinate for 20 minutes
Preheat barbecue grill to medium heat.
Cook with skin side down approximately 15 minutes.
Baste with melted butter or margarine times x 3
Garnish with freshly chopped parsley and lemon slices.
Serve with a side of cold potato salad and a green tossed salad.
