What you need:
- 6 medium-size carrots, peeled
- 2 cloves garlic, chopped
- 1 teaspoon ground caraway seeds
- Sea salt to taste
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup extra-virgin olive oil
Instructions:
- Grate the carrots through the large holes of a grater
- Mix garlic to a paste with the caraway and salt in a mortar
- Stir in the lemon juice, mixing well
- Add the olive oil.
- Beat with a wire whisk to mix
- Pour over the grated carrots.
- Leave at room temperature for flavours to develop (about 30 minutes)
