Mouthwatering Carrot Salad PYD Chefs

What you need:

  • 6 medium-size carrots, peeled
  • 2 cloves garlic, chopped
  • 1 teaspoon ground caraway seeds
  • Sea salt to taste
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup extra-virgin olive oil


  • Grate the carrots through the large holes of a grater
  • Mix garlic to a paste with the caraway and salt in a mortar
  • Stir in the lemon juice, mixing well
  • Add the olive oil.
  • Beat with a wire whisk to mix
  • Pour over the grated carrots.
  • Leave at room temperature for flavours to develop (about 30 minutes)
